Breezy Couscous Salad

  • 1 cups couscous

  • ½ cup fresh spring onion, chopped

  • ½ cup fresh mint, chopped

  • ½ cup fresh parsley, chopped

  • ½ cup fresh coriander, chopped

  • ¼ cup dried cranberries

  • ¼ cup toasted pecans, chopped (optional)


  • 8 tablespoons extra virgin olive oil

  • 3 teaspoons Jida’s Breezy Black Blend

  • 4 tablespoons lemon juice

  • 1 teaspoon honey

    Step 1

    Follow the package instructions to cook the couscous in boiling water. Remove from the heat and let cool to room temperature.

    Chop the spring onions, mint, parsley and coriander

    add to a large bowl along with the couscous; mix to combine well.

    Step 4

    In a small bowl, whisk together the fresh lemon juice, olive oil, and 3 teaspoons of Jida’s Breezy Black Blend until well blended.

    Step 5

    Drizzle the mixture over the couscous salad and add in the dried cranberries and toasted pecans (optional). Toss to combine and refrigerate until serving.
