Grilled Veggies Antipasti
A delicious and easy way to eat healthy. Just cut and mix any veggies you have in the fridge with Jida’s Wild Green blend and olive oil for a healthy antipasto platter for any time of the year
2 sweet potatoes
3 teaspoons “Wild Green Blend”
8 tablespoons extra virgin olive oil
2 red onions
4 small potatoes
Preheat your oven to 180°C / 356°F. In the meantime take a bowl and mix in 3 teaspoons of Jida’s “Wild Green Blend” and 8 spoons of extra virgin olive oil
Slice the capsicums lengthwise and take out all the seeds and membranes. Slice the zucchini lengthwise and slice again to quarters. Slice the sweet potato lengthwise and slice again to quarters. Lastly, slice the onions into quarters.
Place all the sliced veggies on an oven tray and drizzle on top the mixture in the bowl we prepared earlier and stir well until all veggies are coated with the magical mixture.
Place the tray in the oven for around 40 mins or until the veggies have softened and tanned nicely.
