Syrian Pasta (Rishta) with Caramelised Onions

Lentils and caramelised onions scented with Jida’s Bold Brown Blend makes a tasty, savoury pasta sauce. Add the sauce to penne [that’s been cooked in the same water as the rishta for rich middle-eastern flavours]. Then add feta, coriander leaves and pine nuts for a deeply flavourful pasta.

Ingredients

Caramelised onions

  • 4-5 onions, halved and sliced

  • 4 tablespoons extra virgin olive oil

Lentils

  • 1 tablespoon extra virgin olive oil

  • 1 cup (100g / 3.5oz) black or brown lentils

  • 1 cup (100g / 3.5oz) black or brown lentils

  • ½ teaspoon black pepper

  • ½ teaspoon salt

Pasta

  • 500g / 18oz penne pasta

  • 1 tablespoon salt

For Serving

  • 100-150g / 7oz feta cheese, grated

  • 1 cup coriander leaves, chopped

  • 3 tablespoons pine nuts, toasted on a dry frying pan (no oil)

  • 2 tablespoon lemon juice

Preparation

    Step 1

    Caramelised onions: Heat the olive oil in a pan over medium heat and fry in the onions until caramelised and golden brown about 30 mins

    Lentils: Rinse lentils and add to a pot of water (1L / 34oz). Bring the lentils to the boil and then simmer until tender (follow pack instructions). Remove the foam that was extracted from the lentils and add the Jida’s Bold Brown Blend, salt, pepper and olive oil.Cook for additional 10-15min.

    Step 3

    Pasta: Add water to a large pan and stir in salt; bring to a gentle boil. Add pasta to the pan and follow package instructions until al dente.

    To serve, mix the lentils and pasta in a large bowl and then add the caramelised onions on top. Sprinkle with toasted pine nuts, coriander, 2 tbsp lemon juice, and feta cheese.
